Not just fish, but swordfish for Christmas? What is going on?
Singapore’s seafood chain, Fish & Co., well known for its best seafood in a pan, intrigued me with their 2010 limited edition Christmas dish. Served with your pick of sauce: tomato coulis, lemon butter or homemade herb butter, the Rack of Fish $18.95 is marinated & baked to a golden, juicy rack of hearty, meaty swordfish. Presented in a rack, like a lamb rack which stunned me enough, it tasted moist & more flavourful than most fish! Like Fish & Co.’s tradition, the portion was very generous, so don’t worry you’ll go hungry. You most probably won’t. This steak is huge! & juicy! So go with an empty tummy & be wowed by the monstrous size.
You can also choose among mashed potato, sauteed vegetables or paella rice for your side. I picked the sauteed vegetables, a very tasty mix of chunky carrots, mushrooms & melons which complimented the rack of swordfish very well. Crunchy crunch.
